Citrus Shine Muffins
These Citrus Shine Muffins are light, fluffy, and bursting with fresh fruit flavor. The tops bake up golden and glossy, finished with a shiny passion fruit honey drizzle that makes them feel extra special.Last year I let Instagram Stories help me choose a “new bake” each weekend. This year, I’m switching things up a little—sharing the recipe on Friday, then popping into Stories over the weekend with a peek at how the bake turns out. I’m really enjoying a focus on cakes, cookies, and muffins and will continue with that!
I only enjoy a treat like this on the weekend, so a little sugar feels just right—and I love recipes like this that include plenty of real fruit. (This one was delightfully… a bit slop-like in the mixing stage, but trust me, it bakes beautifully.)

Citrus Shine Muffins – Simple Recipe
You’ll need:- 1½ cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- Zest of 1 lime
- 1 cup strawberries, chopped
- ⅓ cup orange juice
- ⅓ cup passion fruit & honey spread mixture ( I use one pre mixed from Beechworth Honey)
- ⅓ cup neutral oil (vegetable or canola)
- 1 egg
- Optional: 1 teaspoon vanilla
To make:
- Preheat oven to 375°F (190°C) and line a muffin tin
- In a bowl, mix flour, baking powder, salt, and lime zest
- In another bowl, whisk the egg, orange juice, passion fruit honey, oil, and vanilla
- Stir wet ingredients into dry until just combined
- Gently fold in strawberries
- Spoon batter into muffin cups, filling about ¾ full
- Bake for 18–22 minutes until puffed and lightly golden
- Cool slightly before topping
Passion Fruit Honey Drizzle
- ½ cup icing sugar
- 1½–2 tablespoons passion fruit & honey mixture
- Stir until smooth and drizzle over warm muffins for that shiny Citrus Shine finish.
