Thought for the day: Before you dive into everything on your list, take a moment to look over your schedule. Make sure there’s a little window tucked in there just for you—some breathing time to do something you enjoy. Even 10 quiet minutes can make the whole day feel lighter.
Over the weekend I did a little baking adventure! I made a batch of Pepernoten (you can find the recipe here: https://ahappyhomeinholland.com/pepernoten-recipe/). They were very popular… the jar was down to three within a day! So of course, I had to bake something else—this time Gingerbread Cupcakes.
I used the Ginger Loaf recipe from AWW Bake but swapped the treacle for a mix of golden syrup, coffee, and cocoa. The icing was a fun experiment too—I melted and mixed it gently over warm water. A new technique for me, and absolutely delicious!
