This week’s midweek bake was a happy little accident — inspired by my recent Friendly Ghost Directed Drawing!
After a busy day of sketching smiling ghosts with the office pup, I found myself wanting a snack that felt balanced — just enough sweetness to feel like a cookie, but still wholesome enough for an everyday bite. I thought I had almond meal in the pantry, but it turned out to be spelt flour — and honestly, it was the perfect surprise! These cookies turned out buttery, toasty, and just sweet enough — sparkling on top with a little white sugar and slivered almonds.

Ingredients

- 250 g butter, softened
- 150 g brown sugar (about ¾ cup, lightly packed)
- 300 g spelt flour (about 2½ cups)
- 2 tsp ground cinnamon
- 1 tsp baking powder
- ½ tsp salt
- 2 egg yolks (or 2 Tbsp milk for egg-free)
- Optional: 2 tsp vanilla extract
- Optional topping: a sprinkle of white sugar + slivered almonds
- Preheat oven to 350°F / 175°C and line a baking tray with parchment paper.
- In a large bowl, cream the butter and brown sugar together until smooth and fluffy.
- Mix in the egg yolks and vanilla (if using).
- Stir in the spelt flour, cinnamon, baking powder, and salt until just combined — don’t overmix!
- Scoop or roll tablespoon-sized balls and flatten gently with your fingers or a fork.
- Sprinkle the tops with white sugar and slivered almonds — they’ll sparkle as they bake.
- Bake for 10–12 minutes, until the edges are golden and the centers are just set.
- Cool on the tray for 5 minutes, then transfer to a rack.
- These cookies are soft inside, crisp at the edges, and smell like autumn in the classroom.
- Keep them in an airtight jar — they’ll stay fresh for several days.
