I’m writing this from my desk with a warm cup of something cozy nearby, and I thought it was the perfect time to catch you up on a few things you may have missed — a little round-up of the colorful, creative, and joy-filled projects I’ve been working on and sharing across all the places!

4. Banana Cocoa Cupcakes – A Sweet Weekend Bake

This past weekend, I did a little baking (you may have seen it in my stories!) and made the most delightful Banana Cocoa Cupcakes. They’re soft, lightly sweet, and perfect with basic pantry staples. Here's the recipe I put together with a little help from my digital kitchen buddy, ChatGPT:

Freshly Baked Banana Cocoa Cupcakes

Banana Cocoa Cupcakes

(Makes 10–12)

Ingredients:
  • 2 very ripe bananas, mashed
  • 1/2 cup (115g) unsalted butter, softened or melted
  • 1/2 cup (100g) sugar (white or brown)
  • 2 eggs
  • 1 tsp vanilla extract (optional)
  • 1/2 cup (45g) unsweetened cocoa powder
  • 3/4 cup (95g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Optional: 1–2 tbsp milk, if batter is thick
Instructions:
  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix mashed bananas, butter, and sugar.
  3. Add eggs and vanilla. Stir to combine.
  4. Sift in cocoa, flour, baking powder, baking soda, and salt. Mix gently.
  5. Add milk if needed. Divide into liners (about 3/4 full).
  6. Bake 16–20 min, until a toothpick comes out with just a few moist crumbs.
  7. Cool and enjoy!
